Watch Those Gauges!
Who bothers to watch the pressure gauge when
customers are anxiously lined up to get their morning latte?
Most baristas don't understand while steaming milk, how easily it
can be siphoned from the steam pitcher back into the boiler, simply
because the pressure in the boiler dropped below the 0.5 bar.
When the pressure drops below this level, the auto-fill injection of
cold water into the boiler can cause a sudden, and unexpected,
suction of milk up the inside of the steam wand, into the
boiler. This usually happens when a very busy employee leaves
the steam wand in an unattended pitcher of milk, distracted by the
other chores of making a drink.
This most often occurs on espresso machines that are undersized and
over-used. Sorrento espresso machines have 30% more steam
capacity, larger elements and a much faster recovery time than most
other competitors.
When operating an older or inferior espresso machine, keep a
watchful eye on this gauge!! It might save you a very costly
repair and extended shutdown.
