Thermo-syphon System
|
The Sorrento thermo-syphon
is the largest system available on the market today. This system is a fresh
water brewing system that continuously circulates your water through the heat exchanger,
even when the machine is resting. What this means for the operator is that
you are always going to be at the optimal level of heat, or thermo balance, always
getting fresh water to the group head.

High Volume Heat
Exchanger
|
The Sorrento also has a high volume heat
exchanger, in essence a mini-boiler, which takes fresh water and heats
it very quickly for the perfect shot. This reduces the use of hot water
taken from the boiler thus optimizing electrical usage and temperature stability.

What is Pre-Infusion?
|
The Sorrento line has one of the largest pre-infusion systems
available on the market. Simply put, pre-infusion is the moistening of
the coffee prior to the extraction. This allows the soluble
elements, the caffeine, aromatic aroma, essences of the coffee to be
extracted more fully.

Progressive
Pre-Infusion
|
Progressive pre-infusion is a more
gradual increase of pressure in the group head which allows the water
to more fully saturate the coffee during the extraction process.
The progressive pre-infusion system puts more of the desirable
elements of the coffee in the cup.

Heavy, Man! (Group Head, that is)

The E-61 group head originally introduced
by Faema in 1961 was responsible for the capture of over 85% of the
Italian market. Due to its sheer mass (9 lbs/4 kg) and progress
pre-infusion feature, this group head has been universally recognized
as giving the most consistent result of any group head on the market.

Revolutionary Boiler
System
|
|
|
The Sorrento has the highest capacity boiler on the market.
The 2 group machine comes with a 14 liter boiler and a 4200 watt
heating element. The 3 group comes with a 22 liter boiler and a
5200 watt heating element. The Sorrento provides greater steam
and hot water capacity than 2 and 3 group machines from other
manufacturers.
The Sorrento is the only machine on the
market with 2 sensors in the boiler. The first is a standard
auto fill sensor, refilling the boiler as water and steam are
used.
The second sensor, is a low water sensor, which will turn the machine
off in the event of an auto fill failure. The machine will alert
the operator of the low water situation, allowing the operator to
manually fill the boiler and bring the machine back on line. Although the auto fill sensor will still need to be replaced, as with
any machine, the Sorrento can continue operation where other machines
would be out of service.
The boiler is filled through the site glass keeping it clear
and useful for the life of the boiler.

Adjustable Cold Water Mixing Valve
|
The Sorrento and Raffaello lines are
the only espresso machines that come standard with a universally
adjustable cold water mixing valve. The cold water mixing valve
allows the operator to adjust the temperature at the water tap from
boiling down to 170 degrees F by adding cold water to the hot water
flow.

water mixing valve are many, some of them include:

-Safer drinks for customers as well as operators

Automatic or Semi-Automatic?
|
The Sorrento Automatic Espresso Machine allows you to push
a button for your extraction, automatically stopping at the correct
amount. This allows you to perform other tasks
while the machine automatically extracts the espresso shot. The
automatic machine also features a semi-automatic switch.
With the semi-automatic Sorrento, the barista must start and stop all
shots. These machines are recommended for the experienced
barista who require complete control for those specialty
shots, the ristretto or lungo (short or long) shots.

Automatic Hot Water Portion Control
|
The Sorrento automatic machine allows you to
program your keypad to your specific hot water needs, usually 8 or 12
oz, to be added automatically to your cup, shutting off at the
appropriate level. Place your cup under the spout, push the button and walk away to work on
your next order.

Technically Speaking
|
All of our machines include advanced fail
safe mechanisms which keep them operating when other machines will
have failed. Dual boiler sensors, cold water mixing
valves, and high capacity heat exchangers all contribute to making

Sorrento Framework
|
Designed by the world famous Italian
designer, Augusto Zanoni, the Sorrento panels are made of powder
coated die-cast aluminum protected with a clear coating. All work
surfaces are constructed of AISI 304
stainless steel and will not corrode and make cleanup easy. The
Sorrento is available in gray, flat black and burgundy. Other colors are available
on special orders.
